Ingredients:
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 2 1/2 cups cubed potatoes
- 1 lb ground beef
- 1 packet low-sodium taco seasoning
- 1 – 10 oz diced tomatoes w/ green chiles
- 1 cup shredded cheese
Directions:
Step 1
Heat 1 tbsp olive oil in a large skillet over medium heat, then add 1/2 cup chopped onions and 2 1/2 cups potatoes. Saute for five minutes. After five minutes, add the ground beef and continue to cook until browned. Once done, drain the liquid, then add 1 packet of low-sodium taco seasoning and 1 can of diced tomatoes with green chiles. Mix until well combined.
Step 2
Cover the skillet with its lid, then simmer for ten minutes. After ten minutes, check the potatoes if for tender already, then top everything with 1 cup of shredded cheese. Let the cheese melt, then serve.
